Ingredients

- grated cheese
- ham
- milk
- cream
- onion or garlic
- lots of butter
- one egg
Steps
Prepare the sauce
(Can be prepared in advance)
- Boil milk and cream in pan
- add onion and bay leave
- bring to boil then leave for 20 minutes to cool
- melt 25g of butter, then add and stir in flour until thickens
- mix in add milk/cream
Making the Toast
- apply melted butter to bread
- toast
Plating
- prepare the bottom toast (toasted side down)
- spread mustard on each piece
- apply sauce on top
- sprinkle cheese
- ham
- add second layer of toast (toasted side up)
- apply sauce again
- add cheese
- bake until cheese melts (200C at 10~15 min)
- add a slice of sunny side up egg and it becomes a Croque Madame
