
I don’t miss much from Singapore, wanton mee is one of those. This recipe is as close enough to what I remember having as a kid.

Ingredients
Portions are relative to each other
- 500g pork, shoulder loin or fillet, not too fatty
- grated garlic 1
- grated ginger 1
- sugar 5
- soy sauce 2
- cooking wine 1
- sesame oil 1
- oyster sauce 1
- sweet bean sauce (甜麺醤) 1
- whatever spices and herbs you like
Prep the meat
- slice the meat in half vertically
- pound/roll till about 2cm thick
- put in a ziplock bag together with sauces
- marinate in fridge for 3-4 hours
- the taste becomes too strong if you marinate over night
Roast
- remove meat from ziplock and place on a grill
- wipe away excess sauces but don’t toss it
- heat oven to 200 deg C, roast meat for 15 minutes
- turn the meat over, brush the sauce onto it and roast for another 10 minutes
- prepare some honey water (2 honey, 1 water)
- brush honey water onto meat, then roast for another 5 minutes
- remove from oven and let rest for 15 minutes
sauce for Wanton noodles
I used whatever ingredients I had, recipes elsewhere differs a bit. Volume is a guide as I don’t use measuring spoons. I just pour the sauces straight from the bottle into the pan and eyeballed it.
Ingredients
- extra virgin olive oil
- maitake mushrooms
- 1 clove of garlic
- oyster sauce 2 tsp
- soy sauce 1 tsp
- sweet soy sauce 1 tsp
- corn starch
- water 1 cup-ish
Prepare the Garlic Oil
- chop the garlic into small itty bitty pieces
- heat the olive oil
- toss in the garlic and fry till brown
- store the entire thing in a bowl or whatever
The sauce
- fry mushrooms till liquid comes out, then salt the mushrooms
- I re-used the fry pan from above without cleaning it, so there’s some oil but I usually fry mushrooms without oil
- add Garlic Oil and stir fry till mushrooms are coated in oil
- add soy sauces and oyster sauce and water
- bring to a boil, then put a lid and let it simmer till nice and thick
- add corn starch to thicken
